LABBÉ : Towards a new project : the Shangri-La in Paris

Philippe LABBÉPhilippe Labbé first followed his training classes at Bernard Loiseau, Roger Vergé or Gérard Boyer in Champagne. Then, in February 2003, he was put at the head of the kitchens of the marvelous hotel the Château de la Chèvre d’Or in Eze, at the seaside of the Mediterranean. He offered his guests a very pure Mediterranean cooking, working the produces with delicacy and technical skills. The chef was soon crowned with two Michelin stars and even named “3rd star hope” in 2008.

At 47 years old, Philippe Labbé has decided to embark on a new project. The Shangri-La group has appointed him Head Chef of all the future restaurants of their new Parisian hotel, set to open early 2011. The chef will manage a French gastronomic restaurant, a Cantonese gastronomic restaurant, the “All day Dining”, the bar and lounges, and the room-service. The hotel should be the European display of the group.

Philippe Labbé manages to unite tradition and modernity. He respects local techniques and adapts them in order to create new flavors. Quality and creativity.
